I feel like entering an animal once a year is a good idea. Here is an example of how I handled it. I don't think anyone expects that we are perfect at recognizing all the animals we have seen before, but I think this system makes sense: 1. Same animal, same year with encounters a month or more apart...

An 8 star single line system may not be that bad either. You could always separate them in a way that's easier for the eye to count.
